Direct from its humble roots in Cabramatta, Bau Truong is now at Harbord Diggers on the Northern Beaches offering authentic modern Vietnamese cuisine.
It is a family-run eatery using safely guarded recipes that are traced back to the childhood of a Vietnamese migrant and head chef/owner, Bac Cang.
Inspiration for the menu comes from Vietnam’s vibrant food culture, with emphasis on the use of fresh locally sourced produce and in-season ingredients.
Bau Truong at the Diggers boasts a delicious selection of Vietnamese delights including entrees, fresh salads, char-grilled meats, stir-fried rice and noodle dishes, fragrant soups, fish, and desserts. Highlights on the menu include crispy golden soft-shell crab wrapped in a fresh rice paper roll, pork belly slow-cooked in a fish sauce with a side of mixed pickle, and of course the quintessential Vietnamese dish, Pho noodle soup.
This vibrant addition to the Diggers also shakes together a refreshing list of tropical fruit drinks, sodas, juices, and traditional Vietnamese iced coffees. It also features an open kitchen where diners can watch each drink and dish as it is prepared.
